Quick & Easy Gooey Butterscotch Coffee Cake

For the cake:
- 1 cup gluten free gum-free all-purpose flour*
- 1/3 cup white granulated sugar
- 1/3 cup light brown sugar, firmly packed
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup milk* combined with ½ Tablespoon apple cider vinegar
- 3 Tablespoons unsweetened applesauce
- 2 Tablespoons oil*
- 1 egg, lightly beaten
For the topping:
- 1/4 cup light brown sugar, firmly packed
- 1/3 cup butterscotch morsels*
- 1/2 teaspoon ground cinnamon
- Preheat oven to 350F.
- Lightly grease an 8×8-inch square baking dish.
- Combine ½ cup milk with ½ Tablespoon vinegar in a small bowl; stir and set aside.
- In a mixing bowl, combine flour through cinnamon; whisk to combine.
- In the bowl with the milk/vinegar mixture, add applesauce, oil and egg; whisk to combine.
- Add liquid mixture to dry ingredients; stir until no lumps appear in batter.
- Spoon batter into prepared baking dish; set aside to make topping.
- In a small bowl, combine topping ingredients; stir.
- Sprinkle topping evenly over batter in baking dish.
- Bake 30 minutes, or until cake rises and a toothpick inserted in center comes out clean.
- Cool in pan slightly before slicing into squares.
Notes:
- To prepare the coffee cake the night before, mix as directed then cover and chill overnight. The next morning, uncover and bake as directed.
- Use your favorite gluten free flour blend in this recipe. For suggestions on making your own, see my Gluten Free Flour Blends.
- For the milk, use any dairy- or plant-based milk you like.
- For the oil, use any neutral-tasting oil you like for baking.

- For the butterscotch chips, you may omit them entirely, replace them with another baking “chip” (chocolate, white chocolate, etc.) or make your own to use in this recipe. Gluten and dairy free brands of butterscotch chips do exist, but not in all markets.
