Sweet and spicy, crunchy and nutty, these gluten-free bites make a perfect party snack. For a more attractive presentation, buy the big, fluffy flakes of sweetened shredded coconut from the bulk area of the store instead of the prepackaged kind, which has smaller flakes.

1 cup (250 mL) | whole raw cashews |
4 tsp (20 mL) | PC® 100% Virgin Cold-Pressed Coconut Oil |
4 tsp (20 mL) | tandoori masala |
¼ tsp (1 mL) | cayenne pepper (optional) |
1 pkg (200 g) | PC® Gluten-Free Pretzel Bites |
¾ cup (188 mL) | sweetened shredded coconut |
1. Preheat oven to 350°F (180°C).
2. Heat large ovenproof skillet over medium heat; cook cashews, oil and tandoori spice, stirring, until fragrant, 1 to 2 minutes.
3. Transfer to oven. Bake until cashews are deep golden, 12 to 15 minutes.
4. Scrape into bowl. Immediately stir in pretzel bites and coconut. Let cool completely, about 30 minutes.
Makes 10 servings.
