GUACAMOLE STEAK FAJITAS
Ingredients
1 tsp. minced Hatch Sliced Jalapeños
1 cup Hatch Green Chile Salsa
1 15-oz. can Refried Beans
1 1/2 Lbs. trimmed skirt steak
1/4 cup peanut oil
1 Tbsp. fresh chopped cilantro
2 cloves garlic, crushed
1/4 tsp. salt
1/4 tsp. black pepper
Juice of two limes
12 10-inch GLUTEN FREE CORN tortillas
1 1/2 cups guacamole
Instructions
Pound the skirt meat. In a large bowl, mix in meat with oil, lime juice, cilantro, garlic, Jalapeños, salt, and pepper. Cover steak with marinade and refrigerate overnight. Heat BBQ grill. Remove steak from marinade and place on the hot oiled grill. Baste occasionally with the marinade until meat is cooked medium to medium well-done, 12 to 15 minutes. During the last few minutes, warm the GLUTEN FREE tortillas. Cut the grilled steak across the grain in slices 1 inch by 3-inches. Place the slices on a well-heated metal oven-proof platter. Put the guacamole, Refried Beans, Picante Sauce, and warm tortillas on separate serving plates. Let diners build their own fajitas. Serves: 6
