Coconut Pecan Paleo Blondies

Ingredients
- 2 1/2 cups Almond Flour
- 1/2 cup Coconut Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Sea Salt
- 1 teaspoon Cinnamon
- 1 cup Shredded Coconut (or dessicated coconut)
- 1 cup Pecan Pieces
- 1/2 cup Melted Coconut Oil
- 3/4 cup Honey
- 2 Whole Eggs
- 1 teaspoon Pure Vanilla Extract (no added sugar)
- 2 pinches of LOVE
Instructions
- Preheat oven to 350F/176C/Gas Mark 4
- Line a glass dish (approx. 11×6 inches) with parchment paper
- Place coconut in a food processor or blender and blend until small pieces are formed like in the picture.
- Next, mix together dry ingredients in one bowl
- Mix wet ingredients together in another bowl
- Now, add contents of both bowls together and mix well
- Press onto parchment paper until evenly distributed
- Bake for 25-35 minutes or until set
- Enjoy with someone you LOVE
Notes
SHREDDED COCONUT……You can use dessicated coconut as well !!!
