Gluten-Free Banana Bread
by “Sharing Gluten Free Recipes”
2 Ripe Bananas, ½ cup butter
STEP 1. Cut Bananas and Butter in 1″ slices and Place in a Food Processor and mix 20 seconds (scrape bowl)
STEP 2. Add: 1 ½ c. King Arthur Gluten Free Multi-purpose flour 1 tsp Xanthan Gum ¾ c. Sugar 2 Eggs ¼ c. Milk 2 tsp. Vinegar 1 tsp. Baking Soda ½ tsp. Salt ½ tsp. Cinnamon
STEP 3. Blend in the Food Processor for10 seconds Scrap Blend 2-3 seconds more If desired add ½ Cup chopped Walnuts,process for 2-3 seconds
STEP 4. Grease or Spray a 9X5 Pan Oven 350* 55-60 Minutes Test with a cake tester Or use a Digital Thermometer..inserted in the center, when it reaches a Temp of 200-210* it is done
STEP 5. Cool on wire rack. Slice and serve
This Bread freezes wonderfully. I wrap each piece in Plastic Wrap then store in a Zip-Lock bag in a container.

Acu Rite Digital Thermometer I used a digital thermometer to check the bread for when its done. Bake until 208*-210* in the center of the bread. Its also great to check the temperature of the milk and water before adding yeast. Its a helpful gadget. My Digital Thermometer is by Acu Rite.
